Smoothie Bowls, The Perfect Brain Food

a smoothie bowl topped with coconut blueberries and nuts

I posted this picture of my breakfast on Instagram (as you do) a week or so ago. There was a surprisingly good response, so I thought I would pop a recipe up for it here. It was a smoothie/”nicecream” bowl that pretty much just used up the frozen fruit we had in the freezer. There are lots of variations on these and you can pretty much add whatever you want. The main things you need to keep in though are the frozen bananas, as these create the bulk and texture of the smoothie. Packed full of nutritious ingredients and really quick to whip up, it makes the perfect start to a day of coding and blogging. Keeps the brain running nice and smoothly (pun intended)!

The only equipment you need is a blender/food processor (and a bowl of course).

  • 2 Frozen Bananas
  • Small Handful Frozen Mango
  • Small Handful Frozen Pineapple
  • Handful of Fresh Blueberries
  • Teaspoon of Acai Powder (optional)
  • 1tsp Coconut Shavings
  • 1tsp Chia Seeds
  • Blueberries
  • 1Tbsp Mixed Fruit and Nut
  • 1tsp Cacao Nibs

Simply throw all of the ingredients other than the toppings into the food processor and whizz until smooth. If the mixture is too thick, you can add a drop of almond milk/water to help it blend. Scoop into a bowl and throw on your ingredients, no need for it to look good unless you’re taking a picture, as it all ends up in the same place anyway… enjoy!

Let me know if you give this a try in the comments or over on twitter as I would love to see your creations.
